Polynesian Spam

2 cans Spam, sliced (12  oz each)

2 T. cooking oil

1 medium onion, sliced

1 green pepper, cut into 1″ squares

13 oz. can pineapple chunks

1/4 c. brown sugar

1 c. chicken bouillon (2 cubes & 1 c. water)

1/4 c. cider vinegar

2 T. cornstarch

2 T. soy sauce

1 fresh orange or 1/2 c. canned mandarin oranges

Slice Spam and brown in oil, remove. Add green pepper and onion, saute until partially cooked, about 5 mins., remove. Heat 1/2 c. of liquid from pineapples in skillet with bouillon, brown sugar, vinegar. Mix cornstarch and soy sauce, stir in to skillet. Heat, stirring constantly until the sauce thickens and turns clear. Add fruit, vegetables and meat. Simmer until hot. Serve over rice. Makes 6-8 servings.
