1 c. flour

1 c. sugar

1/2 t. vanilla

4 egg whites

1/2 c. walnuts, chopped (optional)

2 t. baking powder

pinch of cinnamon

2 c. apples, finely chopped

Mix all ingredients except the apple in a large bowl. The mixture will be thick. Stir in apples. Spray a 9″ pie plate with a non-stick spray. Spoon mixture into the plate and bake for 35 mins at 350 degrees.  This is baked in a pie plate and called a pie, but, the result is more of a cake.
